Caviar Mountain

Ingredients:
1 8-oz Cream Cheese
1 small onion, chopped very fine and drained on a paper towel
2 large eggs, hard-boiled
1 2-oz jar Black Lumpfish Caviar

Separate hard-boiled egg yolks from egg whites. Finely dice hard-boiled egg whites. Mix cream cheese, egg whites and onion together.

Line a small deep bowl with plastic wrap. Pour in cream cheese mixture. Tap bowl to settle cream cheese mixture. Chill mixture in refrigerator for several hours.

After chilling, reverse bowl on serving plate. Remove bowl and plastic wrap. Ice cream cheese mixture with caviar. Force hard-boiled egg yolks through a fine strainer. Sprinkle egg yokes on top of Caviar Mountain.

Serve with crackers or toasted thinly sliced baguettes.

When serving caviar, avoid using silver as it imparts a bitter flavor into the eggs. Instead, use Mother-of-pearl, gold, stainless steel, wood, or plastic.
